So we are just a week away from Super Bowl Sunday, so whats on your party food shopping list? Do you just do finger foods, chips n dips? For me, well of course there will be my salsa, chips of course, variety, tortilla chips, but also doritos, ripples, sour cream and onion dip, probably have some hot wings, burgers and dogs off the grill.
Funny how the Super Bowl has grown into this huge party day, I bet more folks have a Super Bowl party than New Years party, how crazy is that. So let us know what you will be having at your party, and your predictions on the winner..
Ok, so my prediction Cards 34, Steelers 14, I think the Cardinals are looking real good, and they are just on a roll, if they play like they did against the Carolina Panthers they should rip the Steelers a new one.

OK so after Christmas and Thanksgiving you are probably just about turkey and hammed out. Totally understandable, turkey for dinner, turkey/ham sandwiches for lunch.. and if you are like me some turkey soup to go that extra mile. So what is a good dinner you can you make that your family will love and is easy. Lasagna baby. This is not your restaurant style lasagna or that ricotta, or funky smelling cheese or not enough cheese lasagna either. I make lasagna with lots of cheese. Every layer of pasta gets sauce and yeah 2 styles of cheeses, I prefer a good sharp and a mozzarella or colby. I use 1 lb bricks so with 2 lbs of cheese you know its loaded but that makes 2 big pans and 2 small pans, but the cheese is what makes this lasagna so awesome. I have yet to find a restaurant that puts cheese on every layer.
What you need for 1 8.5 inch by 11 inch pan:
* – 2 to 4 cans of spaghetti sauce pending on your pan size and depth(or make your own home made yum)
* – 1 lb of hamburger
* – 1 zucchini (if you like)
* – 1 to 2 boxes of the oven ready lasagna pasta (makes it real easy, no boiling)
* – 2 1/2lb bricks of cheese preferably 1 sharp, 1 mozzarella
* – Italian seasoning
What to do:
1: For heating and cooking time, just follow the instructions on the box for the oven ready pasta.
2: Shred your cheese bricks, blend the 2 varieties.
3: Brown your hamburger and break it down as if you were making hamburger helper or spaghetti, add a little salt pepper and Italian seasonings.
4: Add spaghetti sauce (or home made sauce) to meat after cooked and drained, let simmer on low.
5: Slice your zucchini in thin slices.
6: With a ladle place some sauce on the bottom layer, then add the oven ready pasta
7: On top of the pasta add more sauce, cheese, and some zucchini
8: Repeat step 7 for 3 to 4 layers depending on the depth of your pan. Be sure each layer has a good layer of sauce and cheese.
Place foil cover over pan and put in oven.
This is my favorite way to have lasagna, very good, and as noted not many folks put cheese on every layer. I hope this helps your turkeyed/hammed out situation and that you enjoy this lasagna as much as I do.

So many people I ask if they have ever had turkey soup say no. I find it very surprising. It is one of my favorites and it is so very tasty. Our turkey usually goes like this. Thanksgiving/Christmas dinner, next day turkey sandwiches for lunch, and then left overs for dinner. Next few days some more turkey sandwiches for lunch. Just when not much is left we throw the whole carcass that is left into a pot to make turkey soup. Very good soup!
What you need:
- 1 turkey carcass
- Some left over meat some white some dark
- Medium onion diced
- 3 or 4 celery stalks diced
- 1 bag of mixed veggies (green bean, carrots, and peas)
- 1 bag of thin egg noodles
What to do:
- Take frozen veggies out of freezer to thaw.
- Place entire turkey carcass in big pot of water be sure the turkey is fully under the water, put in the diced onion and celery and add some salt and pepper.
- Bring to a boil and let simmer on medium, add more salt and pepper if needed until you have a good rich broth.
- Turn off and let the broth cool.
- Once cool remove all the turkey bones.
- Put noodles in water
- Bring back up to boil to cook the noodles
- Once the noodles are done turn on medium to med/low heat and add more turkey meat and veggies.
- Let simmer until veggies are good n cooked, add salt and pepper to taste, and enjoy.
Turkey soup is one of my favorite soups. Really easy to make, just like making chicken soup, but the broth is much richer. I hope you enjoy it as much as I do.

Here is a tip on how to save on buying bottled water from the store. What we did was buy a ffew cases of Propel water when it was on sale dirt cheap, 25 cents a bottle. Now we take those same bottles and put them in our dishwasher and put on Anti-Bacteria. The bottles have a wide opening so it is easy to refill them with our filtered water in our refrigerator. Not only do we keep more bottles from going to the dumps, but we also save money from nont buying a case every week at the store.

Love your Starbucks Grande Mocha? Or pick your favorite cafe that serves your Mocha. If you buy the large size i am sure you are paying anywhere from 3 to 4 dollars. Here is a basic way to do a mocha even with regular coffee. However, I would recommend getting some higher quality coffee than say the folgers type in a can. If you frequent Costco they have a very nice 3 lb bag of Sumatra French Roast coffee for about 12 dollars. The coffee is really good, if you have an espresso maker you can use that. For those who just have a regular coffee maker, you can use this also. Just be sure to brew it stronger, so a bit more coffee and a little less water.
What you will need,
1. Coffee
2. Milk of your choice whole, 2% etc.
3. Hershey’s chocolate syrup
4. Sugar/Splenda sweetener of your choice
5. Cool whip, or whip cream
Step 1. Brew coffee be sure to brew stronger than what you usually do, if you are using an espresso, then do as normal for espresso.
Step 2. Fill your cup of choice half way with milk, if you do not have a espresso machine or frothing tool, you can just heat it in the microwave, if you see it bubbling up you know its good n hot.
Step 3. Once your milk is hot, pour in coffee, leave just a bit of room for the chocolate syrup and cool whip/whip cream.
Step 4. For 16oz of coffee I would give 4 shots, basically with Hershey’s I just squeeze a good 4 times, squeeze 1 second release, squeeze 1 second release, etc till I hit 4. Then pending on how sweet you like it, I use splenda, so I hit it with 1 teaspoon of splenda, stir well. Sip to be sure sweetness is at the level you want. Whip cream on top, then drizzle a bit of chocolate syrup on top in your favorite pattern.
Enjoy, its not as good as your favorite coffee spot, but hey when you want to save some money, and enjoy a good coffee, this does well. I really enjoy it.

Ok, so I am curious how many people go the traditional style stuffing vs what I call a froo froo stuffing, one with wierd things added, like chestnuts, or mushrooms, or apples etc.
Me I love traditional simple stuffing, none of that other B.S in my stuffing please. Keep the nuts, fruit, and mushrooms.. (what in the world are people thinking!! Mushrooms in stuffing??) I also like to put my stuffing in the turkey.
So you might ask how do we do our stuffing?
Simple, I take all the giblets, liver etc and put that in a small to medium pot with lots of water and boil.
Then I take onions celery and butter put in a frying pan, and cook until the onions are translucent and butter is melted.
Take 2 loafs of bred and break into smaller peices.
Pour the butter with celery and onions over the bread, along with the broth from the giblets, mixing in some salt, a bit of pepper and sage. I tend to like my stuffing moist, so lots of broth.
Then stuff the bird in front and back, and cook.. Hmmm good.
